I’ve created a grouped rollover. Is there some way to be able to edited part of the group without ungrouping it or changing the alignment?

There’s a couple of different ways. Here’s one:
Change the Site panel to Page view. You will see a hierarchical list of all elements on the page. The currently-selected element will be highlighted, and if you click on another element on the list, the corresponding element will also be highlighted on the design view.
Once you have selected the element you want to edit, press the Return key, and that element will come forward temporarily so you can edit it. If it’s a text container, it will get a flashing text cursor, so you can edit the text within it, etc. Everything about the rest of the element can be modified using the Inspector or keyboard shortcuts or menu items.
