Could someone please advise me on the best way to handle big websites?
I have been running a website for a society since 2005 and the main .freeway file is currently 120Mb in size and growing!
What is the best way of dealing with a site of this size and complexity?

Split it up.
There is a piece on how to do this in the Softpress Knowldgebase.
The other thing to be aware of is how you are adding images to your FW site - if you copy/paste (rather than import) then FW stores a large version of the image file rather than a proxy on import.

Thanks for the information about not using copy or paste for image transfer. (which I have alway used)!
I may have to re-think my strategy in future.
Is there a very big difference between the two methods?

There is a big difference in the actual size of the FW doc itself. I don’t think there is much (if any difference) in the actual site size.
Try a comparison to quantify it - same page, same images, one copy/paste and the other import.
