It’s a bit of a hotch potch…the coach text shows:
Photoshop is ctrl-cmd-H
InDesign is ^-cmd-H (but unresponsive to this)
Illustrator doesn’t show any shortcut at all!
In InDesign CS2, cmd-H shows/hides the outline of your text blocks.
To hide the active application, I usually hold down the Option key and click on the Finder or another app. Works with everything.

Somewhere in InDesign, you can customise the keyboard shortcuts. I customised mine to rectify Adobe’s error.
You may find the Apple default “hide” command clashes with something already set in Adobe. In my case it was something I rarely called upon anyway, so I just removed it.

Yes maybe there is customisation somewhere. As mentioned earlier, cmd-H shows/hides the outline of text blocks.
From memory, as I can’t be bothered to launch ID right now:
Edit menu > Menus.
Choose the “default” menu set and save it as a new version.
Open that version, hunt for the Application menu, and change the Hide/Show shortcut.
InDesign will complain about the clash.
Tell it to shut up, and delete the clashing shortcut (or change it to something else if you prefer).
Save.
Select the new menu set as your default.
As an added bonus, save a this as a new workspace. I have two workspaces, depending on whether I have the large screen plugged into the MacBook Pro or not.
