If I upgraded to lion, what are the benefits to get lion server?

None for most people.
Servers are great machines if they sit in the corner and do nothing but Serve.
Servers are a pain in the neck for all but the most die hard geeks to use as a desktop OS.
Server OSes hate to use DHCP and move from place to place. They like nice stable DNS!!!
Mac Server OS is not even supported on Laptops and I challenged Apple Support on that a couple of years ago as I had new 2 Leopard Server OS(s) and 2 new MacBooks sitting in a dedicated server rack and they said NO! So that started my buying spree of 5 Mac minis so far.

I just tried to update my test server Mac OS-X 10.6.8 Server OS that runs inside of the newest Parallels 6 and I can not sign into the App Store. I get a message that Apple can not recognize my hardware. This is on a 2011 mac mini with 8GB RAM and running Lion.
Looks like Parallels running Lion is out for now.
Parallels is running Windows 7, Mac OS-X 10.6.8 Server and 64bit Ubuntu Server 10.04 just fine. It is just not letting me upgrade Guest OS.

Apple said Wednesday that Lion would be available in August on a USB thumb drive—similar to the recovery drive that ships with the MacBook Air—for $69. Apple hasn’t said if it will stock these at its retail stores, but it will definitely be available to order online.
