Does anyone know of a tutorial that can show how to actually create a blog within freeway because when I go to set one up it just defaults the content already there.

You are not actually creating a Blog within FW, you are creating a Blogger Template to match your FW site.
The FW output code is then used in Blogger to style your Blogger Blog
That page you have linked to is the basis for a Blogger template but it needs to be used at Blogger to actually populate with real content.
