I’ve checked the knowledge base about adding google analytics but it’s not very clear, google gives an html code script to add but the action only allows the UA- code to be added, do I just add the UA- code or insert the script before the closing tags?
Only the UA code. Ignore everything else that Google sends you, the
Action will write that, and into the correct part of the page code.

Sorry, one other question, do I enter it on the site folder, other folders, every page or just the master pages?

Whatever it allows, and whatever you want to track. If it allows you
to add it to the site folder, and you want to track all pages, then
just do that – and don’t apply it to individual pages or subfolders
below that. If it only allows you to apply to pages, then you’ll have
to slog through one at a time. You may have some pages or folders you
don’t want to track, if so, then you’ll have to work out the best
angle to avoid the most work. Maybe subfolders for everything you want
to track, and the other stuff loose in the site folder, or some other
similar strategy.

If you’ve done it, you can just save this information for the next
site you build. I don’t think it matters at all either way – a folder
Action just automates the process of applying a page Action to
multiple pages. Under the hood, they are identical.

No it won’t show up there. If you preview your site/pages in a browser and view the source (code) you will see the analytics code has been inserted near the top, before the body of your site.
It is not immediate. It will take a small while to get the hits showing.
