Well, I,m smarter than I thought. I actually had a the right process in place through Mac’s “Time Machine”. There were all the files on our backup drive after all. I was looking in the wrong place.
Thanks anyway. In the meantime I did locate a manual method of recreating a website, listed in the Knowledgebase section of support. Do a query on “recover lost files” or similar.

That is great news Jim
Time Machine is a great tool but no use unless you have that extra drive hooked up.
And as that Knowledgebase article suggests FW is a great tool for rebuilding your site - whether or not you built it in the first place.
