Thanks for that Joe, but it’s not quite what I’m after.
I have some stereo source files which a client has asked me if I know
how to upmix them to 5.1 surround sound to be played in a standalone
DVD recorder and surround sound speakers for a presentation. So it’s
not how to play them on my Mac, it’s how to encode the files to be
written to DVD/CD.

Yikes. That is a stiff price. Have you looked at Logic Express from
Apple? That’s about $200, and is a full-fledged mixing studio in a
box. One thing I will say about it is this – it expects that you
understand the inner workings of a mixing board and have a working
knowledge of sound mixing. I own it, and have used it extensively for
live recording and minor studio work, but I have probably plumbed
about one tenth of what it can do.
Perhaps what you’re paying for with the other app is one-click-easy.
You might just want to look around for a gigging musician who owns one
or another of the DAW (Digital Audio Workstation) applications like
Logic and ask them to do it for you. Maybe put something in their tip
jar in exchange.
