I left the PHP action in the page.
Can be easy to miss. It does appear that if you have both of these actions on the same page then only one will work - the one that comes first in the build order.

Just an addendum to this thread.
My experience is that the Validate action is no longer required in 6, in fact may interfere with the Send Form Action.
Plus I haven’t found the need to ‘Name’ the field as email.
In the example shown (with the circled word email). See below the “Type” option. If this is selected as email it will validate the field as such.

This is an HTML5 feature so not supported by older browsers.

That is correct - in the sendform action there are pickers now ‘Use item for Sender Name’ and ‘Use item for Sender Address’
