To make site more interesting to look at I do use Graphic text for headlines etc.
Is there a better way to do this with say web fonts, so that the headers can also be read by search engines etc as html text.

A good selection can be found at Google web fonts - Browse Fonts - Google Fonts .

The Caxton action and the Web Fonts action will both allow you to do this - all you need is a suitable font. fontsquirrel.com is a good place to look.

The apple website still uses graphics text for headlines albeit using image replacement which add the required h1 and h2 headings etc so the search engines can see the structure.
I’ve used Walter image replacement action now and again. So all is not lost using graphics headlines.
