I use the excellent FormMail from http://www.tectite.com/ which allows you to include a captcha. You can also select which letters you would like to appear in it and how ‘disguised’ you want it to look.
Yes it can be overcome but it has rarely been a problem for me. The FormMail script is also well supported and regularly updated to try to filter out as much spam as possible.

I agree about reCaptcha - some are impossible to work out!
