I am a Dane and have downloaded Freeway Pro. But the Application’s language is in Danish, but I want the language - menu bar - tools etc. in English.
In the Resources folder there is a map named: "English.iproj.
How can I use this folder so the program is showing command and so on in English.

Try this:
Quit Freeway.
Launch System Preferences, go to the International section, and in the Language panel drag English to the top of the list.
Launch Freeway, which should now run in English.
Back in System Preferences, put your preferred language back to the top (this is to avoid launching other applications in English!).
Quit System Preferences.
When you want to launch Freeway in Danish again, repeat those steps.
Or better still simply Get Info on the Freeway application icon in the
Finder and disable the Danish language for the application. Freeway
will now choose the first language set in the System Preferences that
it also has activated within the application. You can now run just
Freeway in English (for example) while keeping other applications in
Danish.

If you’re using Snow Leopard then you can’t change the language for individual apps (a feature apparently?!), you need to use the trick that Heather suggested in the first post.
