Is it possible to easily do drop-shadow text–or does the layer have to be duplicated in black/grey and offset slightly?

Unfortunately you can’t apply a drop shadow to text as a style so you will need to duplicate the item as you suggested. You can, however, group the text and shadow layers together so they can be animated as a single item in the timeline.
