NAS

It seems the answer to this is oddly elusive.

Can a 2(4,7,10 etc.)-bay NAS be run on a single drive? I realize the answer may depend on the brand so this is more of a general question.

It depends on the RAID controller inside it. Many offer what is called JBOD mode (Just a Bunch Of Drives), and in that case, I don’t think there would be any problem.

That’s interesting.

I was looking at the Synology DS216+ https://www.synology.com/en-us/products/DS216+. From what I’ve found it seems to support JBOD.
