I would like to create a simple text field were a users just fills in there e-mail address and send to join a newsletter.

Also would like to have enter e-mail address in the box, that disappears when the user over writes with there e-mail address

Not sure which action to us, if there is one available, I have supplied a link to an example, at the bottom under Register

In its simplest form if you just want to collect email addresses then you can use the PHP Feedback Form action with a single email input box and Submit button.

If you add Walters HTML5 Input action to the email field (available at actionsforge.com) it allows you to add Placeholder Text (that disappears when the user over writes).
