[Pro] How to select great looking fonts?

I currently use standard browser fonts for most of my websites. I would really like to improve my skills when it comes to selecting great looking web fonts.

Where do I start?

What fonts services do you tend to favor?

Google knows everything. Tracks also use of their hosted fonts on your site.

I would prefer hosting licenced fonts on a by me controlled server.
I must say I have never done that before, never needed it. Because I was comfortable with the common standard webfonts that lives on all platforms.
