I use Mal’s E-Commerce Action successfully on a website.
I need to have the facility where a customer can enter a specific amount into a text field for special payments.
ie: customer submits a form detailing requirements/delivery, etc. Dealer emails back a price. Customer goes to a page where this field can be filled in with the amount and sent as a BUY button as normal.

The easiest way to do this is to set up a product that sells for a
single unit (1 GBP, 1 USD, 1 Euro etc). Then the value the user adds
to the shopping cart isn’t the price but is the quantity (although the
field could be labelled ‘amount’ or ‘price’ or whatever makes most
sense to the user).

Ah - so it is a text field with the Quantity field action applied. Price is set to 1 in action and the text inserted (qty) goes to shop as amount entered - is that it?
