Hi chaps, messing around with a site … and I think I’ve really messed up … I’ve been deleting things using ‘cyber duck’ and think I should really start agin so please, what’s the best way of, as it were, deleting everything on the server so I end up with a clean “canvas” ?

Probably keep going the way you have been (making sure you don’t delete the ‘Web’ folder that makes stuff accessible to the outside world).
And then a clean upload into the webspace. Should all be okay unless you’ve been using something similar to WebYep which stores all of its info online, in which case leave that intact.
