How can I make a table that has 3 rows with 2 equal columns but the last row has only one large cell to put in a message, so it takes up the space of 2 columns giving me 5 cells in all not 6

Create a table with 2 columns and 3 rows, select the cells in the last row, and choose Join Cells from the Item/Table menu.

You should be able to select multiple cells by holding down the Shift key while clicking on them.
You can also select a row of cells by clicking just to the left of the row.
