Does anyone know if the sites I created in 5.5 will convert to Freeway 7 files when I update to 7?

Basically yes - specifically depends on (actions in use and the underlying construction). Simply try it out - but never forget to make a copy of the file. I never saw any reason for doing so. Most of the stuff I have I keep in the FW version created cause responsive design mostly requires (in 99.9%) a review of the strategy anyway.
