is there a way (using Carousel or not) for the user to click link 8 and scroll straight to image 8 without having to scroll through images 2 to 7?

Use Carousel Tabs to create link items that target specific Carousel Panes.
Also, if you set the Effect Duration to zero then you won’t see any slide behaviour at all, it will snap to the chosen Carousel pane with no visible movement.

Thanks Keith, I’ve got it set up with tabs but I do need the smooth scrolling transition. In an ideal world I’d like it to scroll smoothly from image 1 to 8 over a period of a couple of seconds without seeing 2-7 - looks like the user’ll have to quickly see the other images then! - It’s not the end of the world if they do though.

Carousel isn’t going to do this at all, it’s a physical model
completely different from what you describe. You could probably build
this using the Transition FX Actions. What you would need to do is
create a wipe effect on image 1 and have image 8 underneath it. So
your click would trigger the effect, which would “uncover” the image
beneath it.
