Why does Freeway use shift + select to select multiple items in the
page window rather than, as in the file list, command + select? I’m so
used to using command + select in every other Mac program that I still
get caught out when it doesn’t work in Freeway. Is it just me?

I think I’m right in saying that it is because most other apps do
this too and maybe you are trying to apply Finder behaviour to Freeway?
In Finder windows Command-select enables you to select items that are
separate or spaced apart in say, a list of files/icons in a window ie
you can select 2, 5 and 9 from a list of 10.
Shift-select selects everything between and including 2 items ie
everything between 2 and 9.
In Freeway Shift-select selects multiple objects in a similar manner
to the Command-select of the Finder as you say but the same is true
in Photoshop/InDesign and most other graphic apps.
Command-alt-select is a useful command to cycle through objects that
are on top/beneath each other
