Well… some of the fonts are expected by OSX to be there and if removed will cause anomalies in text displayed in system pallets, even some apps that use default system fonts. The foreign language fonts are only needed by those who read those languages, but they are also expected to be there if you have the built-in language module in use for browsing web pages.
So I would say to leave alone any font the Mac comes with and weed out the ones you’ve added that are not being used often.

Well…p’raps I’ll leave well alone then. It worked with Tiger on my G4 and I had no problems, but it’s just irritating to have to scroll through lots of useless fonts to select the primary ones I use.
I seem to remember (not sure from where) that in some cases people removed useless unwanted fonts (not generic, Helvetica, Courier etc.) and even though it screwed their System, putting them back did not rectify the damage.
So I won’t go there.

This should only be an issue with fonts inside /System/Library/Fonts,
but yes, that can leave your Mac unbootable! Putting them back (after
booting from a different volume) should fix things, but there may
be permissions issues too.
